Emmer, also known locally as dinkel, is an old local variety of wild wheat, well adapted to local soil conditions. It grows without the need for spraying or fertilizing and does not draw harmful substances from the soil.
The flour is produced by traditionally stone milling the grain, which keeps more of its natural nutrient composition intact.
Taste and characteristics
It has a mild, slightly nutty flavor. It carries a lower gluten content, but more protein, fat, minerals and vitamins from the A and B groups compared to refined flour.
How to use it
It kneads well and forms a solid base for homemade bread, flatbreads and a range of other dough based bakes, on its own or blended with other flours.

Keep in a cool, dry place, in a sealed pack, away from moisture.
