Einkorn is an old, local variety of wild wheat that grows under natural conditions without the need for spraying or fertilizing. The plant is well adapted to local soil, does not draw harmful substances from it, and holds up well against unfavorable conditions.
The flour is produced by traditionally stone milling the grain, which preserves more of its natural composition.
Taste and characteristics
It has a warm, mildly nutty flavor and the characteristic aroma of old wheat varieties. Compared to refined flour, it holds more protein, fat, minerals and vitamins from the A and B groups, alongside a lower gluten content.
How to use it
It kneads well and forms a solid base for homemade bread, flatbreads and other dough based bakes. It can also be blended with other flours depending on the texture you want.
