Guar gum is a powdered starch obtained from the seeds of an Asian bean. The product belongs to the group of stabilizers and is widely used in the food industry as an emulsifier and homogenizer, as it makes dough more elastic.
Unlike other thickeners, guar gum gels the mixture without heating, which makes it convenient for cold sauces and dressings.
Flavor and characteristics
The product is a fine powder with no taste of its own, which quickly forms a dense gel on contact with liquid.
How to use it
Sift guar gum together with the flour before kneading dough. As a guideline, for 4 tea cups of flour add 1 teaspoon for cookies, 2 for cake, and 4 for muffins or bread made with plain flour. For dressings and sauces, stir 1 teaspoon into 400 ml of liquid - the mixture gels within 5-6 minutes. The product is also useful when mixing incompatible ingredients, such as vinegar and olive oil.
